Still young, the 1999 Cheval-Blanc has a higher than normal percentage of Merlot making the wine a little more approachable in its youth; the wine has a purple-garnet red color, abundant scents of spices, dark berries and oak and multi-layered flavors of black fruits, chocolate and leather, the wine is remarkably round and velvety in the mouth with a long and complex finish; the tannins, while still young, are not aggressive; one of Bordeaux’s greeatest red wines, Cheval Blanc is stylistically a St. Emilion and Pomerol hybrid with an elegant and powerful style all its own.
Serve at 18℃, the wine benefits from at least three hours of breathing; match with elegant game dishes like Roasted Venison, wild duck and boar.
