The wine has a ruby brick red color and attractive cherry bouquet. This medium to full bodied wine opens up very nicely in the mouth with generous flavors of black cherry, strawberries and light oak. This is a big wine but it's also a finesse wine with an impressive balance. The 1997 Borolo from Pio Cesare has more power, but the 1998 vintage wine has greater grace and finesse. Enjoy this wine with elegant risotto and pasta dishes including White Truffle Risotto and Cannelloni Stuffed with Veal, Ham and Cheese. This wine is also a very nice match with Chinese Meat dishes like Stewed Rabbit and Braised bean Curd and Pork in Earth ware Pot.
