The 56% Pinot Noir content makes this wine more robust than most non-vintage Champagnes. The wine has a golden yellow with hints of green color and ripe fruity bouquet. On the palate, a nice tart finish balances red fruit and spice flavors. Lively and persistent bubbles add to the pleasurable drinking experience. The House of Clicquot was founded in 1772 and almost immediately became known as a top quality producer. Antoine Muller, Veuve Clicquot chef de cave, perfected the important process of "remuge" in 1818.The famous Nicole-Barbe Cliquot (Mme Cliquot) inherited the house when her husband died in 1806. She was only 27 but over the next 60 years she built the house into one of the largest and most successful houses in Champagne. Mme Cliquot is often cited as the first modern businesswoman of France. Now owned by the giant luxury group LVMH (Louis Vuitton-Moet-Hennessy), Veuve Cliquot owns 704 acres of vineyards, a large number comprising "Grand Crus" areas in Champagne.
This Champagne makes a very nice aperitif or can be enjoyed with seafood dishes including Grilled Tiger Prawns, Baked Cod with Mushroom Cream Sauce and Rare Seared Salmon Steak with Sour Cream Sauce. This wine also matches well with Shanghai dishes including Sizzling River Eel in Brown Sauce, Flash Fired Crab in Soy Sauce and Ginger and Smoked Yellow Fish. Serve this wine at 8℃.
