The white wines from Graves/Pressac are the best of Bordeaux and among the best white wines of the world. Production is very limited and prices quite high. Ch. Pape Clement is an ancient vineyard that was purchased in 1300 by the Archbishop of Bordeaux, Bertrand de Goth, who later became Pope Clement V. This is the same fellow who moved the Papacy from Rome to Avignon in the south of France. The family of the famous French poet, Paul Montagne, now owns Ch. Pape Clement. Most the Chateau's production is red wine, with only about 1,500 cases of white wine are produced each year. The 1995 Ch. Pape Clement is a very concentrated white wine that expresses the best virtues of the Semillon and Sauvignon Blanc varieties. This is lovely wine with an elegant fish dish. Fine Graves white wines should be served about 9-11 C.
