The 1981 vintage was very difficult throughout France and resulted in small yields in Champagne. Only a very small percentage of the finest grapes harvested in 1981 were used in R.D. 1981. The 65% Pinot Noir and 35% Chardonnay grapes in this wine were approximately 40% smaller than average. This resulted in a very concentrated and powerful wine that has excellent aging potential. In fact, when young this wine was overpowering needing age to balance its intense fruit and citrus flavors. Bollinger did not release the 1981 RD for 17 years, storing the wine in their enormous caverns. This wine will reach its peak from 2000-2010 growing in complexity and character. It matches well with delicately prepared Chinese fish and white meat dishes. Tasted at a recent ISACS Guide wine tasting, the R.D. 1981 was also a remarkable companion to Beijing duck because its cuts the greasiness of the dish and enhances the flavors of the duck meat and skin.
