The addition of Amarone pomace that causes a second fermentation results in a lovely wine with a deep ruby red color, abundant scents of dark berries and rich, concentrated black cherries and other dark fruit flavors; the balance and structure of this wine as well as the long finish are indeed impressive.
Allow 30 minutes for breathing and serve at 18˚C; pair with hard and semi-hard Italian cheeses, grilled beef and lamb as well as Beijing style roasted lamb.
18 months in part small barrels and part large Slavonian oak followed by six months bottle aging.
Drinking nicely now but will improve with a few more years of cellaring and can be kept for over 15 years.
