The 1997 Cabernet Sauvignon from Jordan is a winner at $2,300. This dense but elegant wine is a good example of the increasing complexity of top California blends.
The wine has a lovely dark purple color and heady dark fruit bouquet. The wine offers an abundance of dark berries and chocolate flavor. The full tannins are very well developed. The wine was so powerful when young the Jordan winemakers increased the amount of new oak used to age the wine. The wine spent 12 months in small French and American oak barrels then an additional six months in large oak cooperage. The 1997 wine spent another 12 months aging in the bottle before being released. The result of all this care is impressive; this is a delicious wine. Enjoy this wine with Rack of Veal with Morel Sauce, Roasted Stuffed Turkey and Prime Steaks. This wine also matches nicely with Teppanyaki style steaks. Serve this wine at 18 ℃.
Background
In 1972, geologist and wine connoisseur Tom Jordan acquired 275 acres of prune orchards and 1300 acres of rolling oak woodlands for conversion to vineyards and an informal preserve for deer, wild turkey, coyotes, waterfowl, and other wildlife. From the late 1970s the Jordan Winery has been making widely acclaimed Cabernet Sauvignon and Chardonnay wines. Always robust, these wines have become increasingly elegant over the past decade. This is also one of the prettiest wineries in California.
