At $2,900, this is a beautifully made vintage Champagne. The wine offers the delicious robust elegance of the Bollinger style.

The Grande Annee series of vintage Champagnes are only made in excellent vintages when the grapes have reach an optimal balance between the acids and sugars. The 1995 wine is a blended wine from Grands Cru (82%) and Premier Cru (18%) vineyards. The wine has a lovely golden yellow color. This is a very aromatic wine with scents of citrus and flowers. The fine, persistent bubbles and ripe fruit flavors make for a very enjoyable drinking experience. The Grande Annee wines are not as heavy as Bollinger's R.D. wines but they have plenty of body and structure and are some of the best value vintage Champagnes available in Taiwan. Enjoy this wine with Grilled Lobster with Hollandaise Sauce, Veal Chop with Wild Mushroom and Champagne Sauce and Cold Peasant with Wild Mushroom Salad. This wine also matches nicely with hearty Chinese dishes like Beijing Duck and Whole Roasted Carp in Brown sauce. Serve this Champagne at 10 ℃.

Bollinger is one of the greatest Champagne houses. This family-owned house has been producing top quality wines since 1829. The firm owes numerous top quality vineyards in Champagne; 60% are classified as "Grand-Cru" and 30% are classified as ‘Premier-Cru’. All non-vintage Bollinger Champagnes are aged for a minimum of three years (the legal minimum is 12 months) while Bollinger vintage Champagnes are still fermented in wooden casks. This gives the wines a more robust style than most modern Champagnes. Vintage wines are aged for five years and deluxe vintage cuvees are aged for at least eight years.
