Dom Perignon is one of the world's great prestige Champagnes. The 1993 vintage at $3,000 offers the startling flavors and classic style that Dom Perignon is famed for.
This golden yellow Champagne has abundant citrus and floral scents. The tiny, pinpoint bubbles are pleasing in the mouth. The ripe fruit, mineral and creamy flavors are very delicious. This is still a fresh Champagne that will develop even more character as the wine ages. In general, Dom Perignon ages very well and this vintage will not be an exception. This is a very lush wine that's best enjoyed with elegant seafood or light meat dishes including, Baked Whole Salmon with Champagne Sauce, Pheasant Under Glass and Cold Sliced Chicken Breast with Black Truffles. The wine also matches well with Chinese Style Sauteed Lobster Tails and Roasted Suckling Pig. Serve this Champagne at 10 C.
Named after a 17th century Benedictine monk, this is the world's most famous prestige Champagne. Although he wasn't the first to put the bubbles into Champagne, Dom Perignon was one of the great winemaking innovators of his time as he worked in the famed Hautviller Monestary. In 1794, Moet & Chandon bought the Hautviller monastery. Vintage Champagne under the Dom Perignon label was first produced in 1936.
