White wines are not usually as “collectable” as red wines, but this is one of the best Grand Cru white wines of a very good Burgundy vintage and will continue to develop for many years. At $5,800 it's a truly good-value Collector wine.
Paul Pernot is a very high-quality domain with small production. Because he is well known only to Burgundy connoisseurs, his wines are among the best value Grand Cru and 1er Cru Burgundy wines. His 2000 Batard Montrachet is an extremely appealing full-bodied wine with rich golden color. The intense, refined Chardonnay fruit and white flower flavors are balanced with a pleasant acidity. The wine's finish is extremely long and complex. Enjoy this rich and smooth wine with Roasted Whole Scottish Salmon, Veal Roast with Morel Cream Sauce and Sweetbreads in Champagne or White Burgundy Sauce. Serve this wine slightly chilled, about 10℃.

Much of his wine is sold to a leading negociants but a limited quantity of his wines is sold under his own label. His 1er Cru Folatieres is often considered the finest wine from this historic vineyard. Pernot's traditional style favors subtle oak flavors, although he has begun a new system of using more new oak for his Cru Folatieres and Batard-Montrachet wines.
