In 1999, Pascal Jolivet has turned out a very fine single vineyard Sancerre wine available for $1,000 with all the delicious mineral tartness that Sancerre wines are renowned for.
The wine has a medium yellow color lively green fruit bouquet. This is a concentrated wine with very fresh, slightly acidic fruit flavors and a touch of oak. Sancerre white wine should be refreshing to the palate and this wine certainly attacks the palate with an abundance of refreshing flavors. Pair this wine with Fresh Abalone, Grilled Mackerel and Roasted Eel. This wine also matches well with Chinese Seafood and Meat dishes including Braised Carp, "Kwei-Fei" Chicken and Garlic Sauce Pork Slices. This wine also makes a nice aperitif. Serve this wine chilled, about 10℃.
