Legion has it that the name of this Chateau comes from the popular French seaman expression “baissez les Voles” that means “strike the sails”. The former owner of this chateau was the Duke of Epernon, Grand Admiral of France and as the boats of the French Navy sailed passed by they would raise their sails in respect. In 1855, Ch. Beychevelle was designated a fourth growth wine. May lovers of this wine feel it deserves a more lofty status. Ch. Beychevelle has never been considered a very robust Bordeaux, rather, it has a grace and charm derived from soft dark fruit flavors and gentle tannins. It is one of the easiest-drinking of the classed growth Bordeaux wines.
In the great 1982 vintage, Beychevelle made an excellent wine full of concentrated black current and even chocolate flavors. The tannins are very gentle and the wine very smooth. The typical St. Julien wine is fully mature now (unlike a bigger wine like Ch. Latour). This wine needs to be decanted and should be served at no higher than 18 C about 30 minutes after opening. Elegant chicken, veal and lamb dishes are an excellent match with this wine.
