The small grape yield of 1988 resulted in lean and austere wines in Champagne. The Bollinger RD was one of the top Champagnes produced in this vintage. It exhibits intense peach and citrus flavors with a very refreshingly crisp finish. Like most RDs the wine is made from 65% Pinot Noir and 35% Chardonnay grapes. This is an excellent wine to match with elegant Salmon dishes like Whole Salmon Roasted with Champagne Sauce and Grilled Salmon Steak with Hollandaise Sauce.
