A quintessential Chablis with pale yellow color with hints of green, a mineral and restrained fruit nose and lovely flavors of flint, violets and unripe yellow fruit; like most good Chablis this is an austere wine with very good acidity; Chanson is a respected large grower-negotiant with a long history, now owned by the Champagne house Bollinger.
No breathing required, serve at 10˚C; match with elegant fish dishes like Dover Sole Meuniere and Poached Salmon as well as classic Chinese fish dishes like steamed fish in soy sauce with seasoned scallions or Shanghai style braised carp in brown sauce.
6 months in French oak and 8 months bottle aging.
Drink now or can be cellared for another 2~3 years.
